I was wondering if there is a way to build track in NL2 like one would build a curved line in Adobe illustrator? Said curve being a bezier that can be drawn like illustrator's pen tool?

NL1 uses bezier curves but I believe NL2 uses nurbs curves. There's no way around it, I'm afraid, but building with nurbs curves is miles better than with bezier curves once you get used to it. It's just... it takes a while to get the hang of it.
It's been a long time

I think placing a strict vertex in between 2 non-strict vertices is the closest thing to emulating Beziers in NL2.

Friendly Note: Nurbs is what we usually call "B-Spline". :)
