Also, use the iSmooth technique (this only works if your segments are approximately the same length which they should be if you want a smooth track). First, select a segment and hit ctrl+I to straighten it. This will make it so the handles controlling the segment will even out (don't know how else to explain it). Then, select the segment and the two vertices on either and and hit ctrl+G to smooth. I like to do the "delete and split" technique after I've done this as is makes it smoother without too much work on your part.
The delete and split technique is simply deleting a vertice (what's the singular form?) and smooth (ctrl+G) the segment it was on, then, split that segment to replace the vertice you deleted.
