I got a new GPU to upgrade from my last and one, I have the ability to have two monitors. I have gone through all the settings to try and set up no limits to span across both screens(which are identical). The resolution cap is 1280x1024 in the simulator and on the NVIDIA control panel. But I need to get it to go up to 2560x1024. Does anyone know how to set this up.

You'll find that spanning gets old quick - it's kind of a gimmick. Back when I had two monitors I did the multiple desktop thing, which I found way more productive for everything including NoLimits (could check the sim and editor simultaneously for example). I don't really know the answer to your question, but try the multiple desktops thing, it's really much more useful.

^I do that but I just want to get the game to display on both screens.

I don't think NoLimits would support that. Why would you want it in the first place?

^I have two real small monitors so I wanted it to span across both to make it look a lot larger.

Still, if you stretched it across both monitors you would likely have an image thats way distorted since its twice as wide as its supposed to be. Not to mention the division of the two monitors right in the middle of the screen.
On the other hand, having the sim and the editor/newton and editor open on full screens at the same time sounds like a great idea. I'll have to try that some time.
