I found like 5 gameplay videos at gamespot.They maybe kind of old but you should still check them out.There are also 6 new screens from beta testers that I found so check those out as well.

You should look closely at the videos they show several features that will hopefully be in the game like the toilet bowl thing on waterslides.I've also seen a coaster in one of the vids that looks a lot like Storm Runner at Hershey Park.

That's one of the cool things about RCT3... the guests react when you torture them. I've spent more time running over guests with roller coasters than building rides.
