General trackwork question

All right, so this might not be easy to explain verbally for anyone who answers but.... I'm a mac user and have been toiling endlessly on a new track and no matter how hard i work by hand and use command-G to at least guide me, there are a ton of little jerks I'm having problems working out. Any other mac users have some suggestions since we don't have the aid of any of the extra tools save the coaster calc? (Im already using a mouse, not a trackpad....)

Try to make your handles as close as possible to even, and close to the same length as those of the previous vertices.
