For me, it's Blue Streak at Cedar Point, from 1964. Still a very fun ride despite it's age.

Oldest steel coaster I've ridden is Cedar Creek Mine Ride (1969).

That would be a tie between Racer and Scooby Doo/Beastie/Fairly Oddparents/Woodstock at Kings Island (both opened April 29, 1972).

Grand National at Blackpool - 1935.

Closely followed by Big Dipper at Blackpool - redesigned in 1936 after being built in 1923 - I never managed to ride the other woodies at Blackpool (sadface)
Coaster Count - 198

That's not really surprising because there are a number of rides close by that are older that anyone who has ridden the Cyclone has probably ridden at least one or two of (KW Jackrabbit, Leap The Dips, Dorney Thunderhawk)

Leap the Dips @ Lakemont park. Still manages to be terrifying, although probably not in the ways the designers intended.
Boulder Dash was the only good roller coaster.

Jack Rabbit at Seabreeze. The second oldest operating coaster (and oldest continually operating coaster) in North America, this ride has been running since 1920.

Oldest steel would be Little Dipper at Quassy Amusement Park, which dates back to 1952. Yes, this thing predates the Matterhorn Bobsleds (as does a second steel coaster I've ridden, Wild Chipmunk at Lakeside Amusement Park).
Coaster Count: 535 (114 wood, 444 steel); Park Count: 110
Top 5 Wood: El Toro, Voyage, Thunderhead, Outlaw Run, Boulder Dash
Top 5 Steel: Superman the Ride, Fury 325, Millennium Force, X2, Intimidator 305
