It looks like that was the bakery. That building and the 2 buildings on the right are one big store. I pretty much doubt that frame was there or that it was very easy to remove that one building.

I believe that the bakery is two buildings to the right or are there two bakeries in this street? Heino's Cafe is in the buildings on the left. I don't really recall that there was something for park guests in this building.

Edit:
Phantasialand also further updated the rockworks on Black Mamba:

Totally Mind Blowing. If only every park had this mind set.

The whole shop is/was a candy store. The bakery (left) is now gone, the candy store (centre) doesn't have it's own entrance and the waffle store (right) wasn't called a bakery. Not sure what the sign above the door said, but the building with the bakery sign was the one with the pastries, not the one with the waffles.

Why would they do it this way and not flat? I would think this puts a HUGE amount of uneven strain on the train, especially on the wheels, for cars to be sitting there for extended periods of time.

Well, seeing as the loading track in the station is also vertically oriented, (and we can assume that the brake section before the transfer is vertically oriented as well), it would make more sense from an engineering standpoint to keep the vertical position to:
A: reduce cost by minimizing the amount of steel required for the transfer (as it wouldn't have to take up extra space/materials to transfer from vertical to horizontal)
B: reduce space required for the overall footprint/free up space for a more extensive layout (this IS Phantasialand and space is a rather precious commodity)

Looks like the launch and brakes will be right next to each other and the roll we've been seeing will crash through a building.

The wheels is a good point, because it's not possible to replace the wheels whilst they're sat on those transfer tracks. I would assume Vekoma have developed a system where the trains are actually supported from the frame themselves once situated in the maintenance bay and don't actually need to be stored on the track.

I was astonished by the size of Klugheim and now I'm also all ready astonished by the size of this project... I don't know how they keep filling their park with these massive rides while they have no space.

Probably because they use the space more efficiently than most parks.
