dueling coaster question

On NL, how do you make a dueling ride without having to make it one continuous circuit, like 2 different continuous circuits?

I'm pretty sure you can't, but I'm only 99% certain.

complete one ride, but instead of connecting it to the first station, create a second station then make you're second ride and connect that one to the first station

you could try connecting the two tracks at the top of the spike and having a station on either end, with the sync on and two trains running it should work.
