Is there a way to see your coasters G-forces before you go to the simulator so you can go back and edit it?

Nope, gunna have to learn to get used to opening the sim every new section of the ride; just part of the building process. I'd actually recommend opening the sim after every bit of the ride you make just to make sure everything looks right and feels right before you finish and have to go back and change a bunch of stuff.

To add to what strata force has said it is also usefull to check front, back and moddle as the forces will differ throughout the length of your train.
