When i connect sections on a coaster up (by selecting ends of track then clicking "connect"), and it becomes a complete circuit, it turns into one complete station or lift for some reason. what am i doing wrong?

You need to ensure you have section type separators on each side of your lift/station otherwise the editor doesn't know to stop it from being a lift/station. Basically add a type separator to the section of track you just connected and drag it to suit.
If that doesn't make sense I'll sketch something up when I get onto NL (or if someone beats me to it)
I'm not completely sure if this will fix the problem, but you might have to have a third block. I don't know why you would need an extra one since you already have more blocks than trains, but it's worth a shot.

Yeah, you always need at least one block break on your coaster, unless it's a shuttle coaster. A transport is closer related to track than a break. The lift is like a block break, but the next block break has to be clear before the train before it can proceed. If there's no block break after a previous block break, then it has to either enter the station or stay on that block.
